This delicious summer burrata salad is filled with ripe, juicy peaches, fresh basil, creamy burrata cheese and salty prosciutto. It’s the perfect light summer salad!
You know what I love most about summer? Light, fresh food. That’s what. Don’t get me wrong, I really love soups and warm winter foods, but peaches and tomatoes are seriously heaven in summer.
Lately I’ve spent the majority of my time snacking on heirloom tomatoes and light cheeses with a lot, and I mean a LOT of white wine. I mean, I’m not an alcoholic but I think my recycle bin could try to argue differently. At least it’s quality wine right? I’ve convinced myself that it’s good for me.
I’ve also been making a lot of fresh salads, like this fresh burrata salad. Somehow they’re filling and delicious but at the same time so light and refreshing.
This salad is so great because it’s light and so wonderfully sweet from ripe peaches and nectarines. Realistically this is great with ANY stone fruit, but I prefer fresh nectarines and peaches.
This goes wonderfully with my Sparkling Rosé Sangria, and is a great starter before you dive into my Roasted salmon with balsamic cherry tomatoes. This is also great to serve as a starter with my simple Trader Joe’s Cheese board!
Another fun variation to this burrata salad is using BelGioso truffle burrata. Whole new depth of flavor, and it’s really delicious with the fruit and honey (surprisingly enough!).
Peach, Prosciutto and Burrata Salad
Ingredients
Instructions
- Slice peaches or nectarines, and chop fresh basil.
- On a platter assemble butter lettuce (if using), peaches, and pistachios. Rip the prosciutto into smaller pieces and break up the burrata over the top of the salad to evenly distribute pieces.
- Drizzle with honey, sprinkle the basil and zest lemon over the top of the salad. If using olive oil, lightly drizzle over the top and serve salad immediately
