My favorite summer food is probably barbecue. No discrimination, just all types of barbecue. I don’t usually eat a lot of barbecue during other months of the year. I’m realizing that I pack it all into the 3 month period of summer and basically swim in barbecue sauce and peaches until I’ve had enough to make it through the next 9 months. Like some weird kind of barbecue hibernation. Which I look forward to every year because have your tried barbecue sauce? Yes PLEASE.
One thing my family LOVES is what they call “Gulliver’s Corn”. It’s a Day family staple and it’s pretty much corn, butter and heavy cream with a bit of salt and pepper – and sometimes sugar. Totally delicious but crazy unhealthy. I love it so much but I eat Gulliver’s Corn sparingly because I know how unhealthy it is. And I do have quite a few dishes on here that wouldn’t exactly be considered healthy, but I only eat those things in moderation so I’m allowed to be a little judgy here right?
This version of creamed corn is not healthy by any means (I mean hello – it’s still creamed corn) but this has a lighter spiced flare to it that still satisfies that creamed corn craving but doesn’t totally kill my summer bod I worked (or like “kind of” worked) for. A little bit or turmeric and chili powder goes a long way to take this creamed corn to a delicious and different take on the traditional creamed corn you’ve been having at Christmas or thanksgiving for years. This is so tasty alongside your traditional barbecue options or to accompany your holiday dinners and impress your family. It’s pretty versatile, and it’s made in a slow-cooker!
This slow-cooker creamed corn is seriously delicious. I threw all of these ingredients into the slow cooker for about 2 ½ to 3 hours and voila! Easy as that. Though you should stir once or twice because the sides tend to burn without all of that additional heavy cream. This is also delicious baked in the oven for a half hour or so (or with Jalapenos/Bell Peppers and Bacon if you’re feeling particularly adventurous). My slow-cooker creamed corn is the perfect side dish for summer or even fall!
Ingredients
- 6 cups yellow corn thawed if frozen
- 4 oz cream cheese
- 1/2 cup heavy cream
- 1/2 cup milk
- 1 tbsp turmeric
- 1 tsp paprika
- 1 tsp chili powder
- salt and pepper to taste
Instructions
- Combine all ingredients in a slow cooker and cook 2 2/1 -3 hours. Stir once 2 hours in. Enjoy!
