This chicken is ridiculously easy to make, extremely versatile and done in 4 hours in the crock pot! A perfect at-home meal fit for adults and kids alike!
The world is a crazy place right now. We are all staying home and it’s so weird. It’s a great time though to reconnect with your kitchen and bring home-cooked meals to your family. This crockpot chicken is easy, and really delicious. This is also extremely versatile.
Here’s why you’ll absolutely love this:
- This slow cooker chicken is adult AND kid friendly. Kids love this because it’s not overly complicated and it has familiar ingredients.
- This has minimal prep and clean up! You’ll use one pan, a spatula and a crock pot to cook, and you’ll only need to cut up an onion and pepper!
- This is a set and forget, easy recipe. You’ll need to cook the onion and peppers and then throw it all in your slow cooker!
- This mexican chicken is extremely versatile! You can use this to make tacos, burritos, and lettuce wraps. Or it can be a protein over rice and/or beans, on top of salad, and so many other things! I personally love these for tacos, on top of rice as a protein bowl, and as lettuce wraps!

- You can omit the peppers if you’re worried about this being too spicy, or if you can’t find this specific kind of pepper. You can also substitute in jalapeño if you like this a little spicier (wink).
- I used chicken breasts and tenders here. However, boneless skinless thighs are also good too! Personally, I prefer all white meat when it comes to shredded chicken.
How to make this, step-by-step:
- Slice up your onion and pepper into strips/half moons and mince the garlic.
- Heat a pan over medium heat. Add olive oil and then add the onions and peppers. Cook until onions are translucent.
- Add garlic and cook 30 seconds more.
- In a slow cooker, add all ingredients, including onion and pepper mix, and stir to combine.
- Set over high heat and cook 4-5 hours or until chicken shreds easily.
FAQ:
- Can you put raw chicken in a slow cooker? Yes! Absolutely.
- Can you put frozen chicken in a slow cooker? No, you might find some sources that suggest or say that you can. However, the USDA states that you should not, so we will stick with that. If frozen, thaw your chicken prior to cooking.
- Can you omit anything? Yes, of course. If you don’t want to cook the onions peppers and garlic prior, you can skip that process. I’d still add the garlic to the crock pot though.
- Can you add cream cheese or milk to make it creamy? Yes, I would stick with a little cream cheese here, not necessarily milk.

- 1 tbsp olive oil
- 1/2 yellow onion
- 1 poblano pepper optional
- 1 clove garlic
- 2 – 2.5 lbs boneless skinless chicken breast
- 1 1/2 cups corn
- 2.5 cups salsa of choice
- 1 tsp chili powder
- 1.5 tsp cumin
- salt and pepper to taste
Instructions
